Due to its high protein content, this meal is a good source of 5-HTP, tryptophan, vitamin B-6 and magnesium. The addition of capsicum also boosts its anti-oxidant content.
This is also a great meal as it freezes well, and can easily be made in bulk and frozen in portion size containers for a quick meal with minimal preparation.
Ingredients
250g lean minced beef
1 medium onion, finely chopped
2 cloves garlic, finely chopped
1 tbsp olive oil
1 400g tin of chopped tomatoes
½ green capsicum, finely chopped
½ red capsicum, finely chopped
200g pasta, any type
Salt, pepper and herbs to taste
Method
Heat oilin saucepan on medium heat. Add onion and garlic, stir until softened. Add meat, cook until well browned, stirring occasionally. Add capsicum and cook for 10 minutes. Add chopped tomatoes, salt, pepper and herbs to taste. Allow to cook for 20 minutes.
In the meantime, add pasta to boiling water and cook as per directions on the packet. Serve pasta with meat sauce and grated cheese if desired.
